Hunt vs Shoot

If inches of bone or antler is what you need to feel successful in your hunting, then perhaps hunting isn’t for you. If shooting an animal from long range and calling it “hunting” is what you need, then perhaps you should try something else… maybe try actually HUNTING.

Simple Gourmet: Deer Sausage Scotch Eggs

  • by

Scotch eggs are like a complete breakfast in a compact bundle. They are pub food in Britain, but I could eat them for any meal — serve them mustard, ranch sauce, or maybe maple syrup at breakfast. The best part is that they are simple to make and they put your wild game sausage to good use.

Simple Gourmet: Szechuan-Style Noodles with Bear

  • by

The GunsAmerica team had a dish like this at SHOT: It was delicious. The soup broth is full of flavor from several spices, and the braised meat is tender and tasty. We had it with beef, which was mostly fat, and the whole time I was dreaming of eating it with bear meat.

Waterfowl Headlamps – Technology At Its Best

I reached out to some high-tech companies to gain access to a few of their products that I considered among the best if not the best in the current marketplace.  I am not talking about hyped-up splash ads for headlamps but rather ones with a great deal of engineering, design, and durability meant to last for seasons.

Duck Boats and Blind Grass

In the world of waterfowl, “hide” is key. Ducks can see and hear, but getting a good hide is top of the list for a good day of hunting.

Easy Venison Fajitas

These venison fajitas are easily one of my favorite recipes. Not only are they delicious but they are easy to prepare and only take about 45 minutes.

Simple Gourmet: Deer Coconut Korma

  • by

This recipe is the perfect thing to utilize some meat that over stayed its welcome in the freezer. It’ll tenderize it and rehydrate it.

Hatch Outwest Bipod [Product Video]

Quick video overview of the Hatch Outwest Bipod. It may be the ultimate hunting bipod due to its lightweight, American-made construction, and an incredible range of adjustments.

Simple Gourmet: Butter Bear

  • by

If you’ve eaten Butter Chicken at an Indian restaurant, then this dish will be familiar. Butter Bear is rich and creamy, and simmering any meat in this sauce for a while will make it tender and delicious.

Simple Gourmet: Game Sausage, Duck Egg, & Apple Breakfast Sandwich

There’s no denying: An excellent breakfast sandwich will take you a long way up a mountain before you stop for lunch or stop to process the critter you just killed. McDonald’s has a good handle on the system, but you can easily do better with quality meat, egg, and cheese.

Crispi Guide GTX Review

Research and conversations with other mountain hunters led me to the Crispi Guide GTX and after well over one hundred field days and hundreds of miles, I’m happy to report back.

Review: Badlands Detour Hoodie

  • by

I’ve been using the Calor jacket and Detour hoodie on several hunts and adventures, and I’m impressed. Badlands’ choice of fabrics and design details come together to make two distinct jackets that both have a firm place in my loadout for Spring, Fall, and Winter hunts.

Simple Gourmet: Elk Cheesesteak Sandwiches

  • by

As always, my purpose isn’t to wow you with amazing recipes that take a chef to make them. I just want to give you ideas for using your meat that everyone will enjoy. That way, it’ll be easier to get away to hunt again next time.

Simple Gourmet: Venison Sausage Dutch Baby

  • by

Basically, it’s an egg-rich dish baked in the oven. You can add powdered sugar and butter for a sweet breakfast, or make it savory style with sausage or bacon and other additions for a tasty meal any time.

Simple Gourmet: Hunting & Eating Desert Raccoons

  • by

I took this raccoon roast to Sunday Dinner at a friend’s house. 16 people ate it and they all agreed that it tasted like a beef roast — what do you expect when it eats the same things as cows each day?

Loch Ness Roe Deer

My hunt for Scottish Roe deer…It was unknown to me but we would be hunting the highlands surrounding Loch Ness of all places. This detail added considerably to the memory of the hunt.

Waterfowl Camouflage

The variety of camouflage possibilities in today’s waterfowl market is huge.  What to wear and what to choose are both based on what store carries what and what you can get sight unseen on the internet. For this article, I will focus on waterfowl camouflage used primarily from October to February in marsh and timber settings. As well as fabric in most of these patterns is available allowing one to make their own outer gear.

Simple Gourmet: Smoked Summer Sausage with Bear Meat

  • by

This summer sausage recipe is ideal for all those animals whose steaks are less delicious than you’d hoped. You can make as much as you like and store it in the freezer. It makes excellent sandwiches and terrific low-carb meals with cheese. Serve it at the Super Bowl party with cheese and crackers. And it’s a must-have for all your upcoming hunts this year. These sausages are a terrific way to share game meat with first-timers. It tastes like sausage and doesn’t have any particularly wild flavors. Friends will see that wild meat taste good.

Simple Gourmet: Bear Stroganoff with Wild Mushrooms

  • by

This recipe is seriously hearty and the perfect thing after a long day hunting. Stroganoff is credited as being a Russian dish, and I gotta believe making it with bear meat is more Russian than using beef. Plus, you gotta save the cows to make all the sour cream you’re going to need.

It’s Time To Hit The 3-D Trail

One of the best ways to break the routine, sharpen your bow shooting skills, and prepare for a freezer-filling fall is to pen the dotted line and enter a few (as many as you can) 3-D shoots.

Darn Tough Socks: Lifetime Means Lifetime

Clay, are you really gonna write a column about socks? Yes. Yes, I am. Socks are an underrated part of your combat chassis unless you happen to be an ex-Grunt. For a Grunt, socks are of the utmost importance. If boots are the equivalent of tires, then socks are the air in those tires. A good sock can make the difference between arriving at your destination ready to fight, and arriving with blisters and boo-boos.

Hands-On with the Primos Gen 3 Trigger Sticks

I don’t shoot hogs from a blind here in Texas so I often find myself shooting from strange angles or on uneven terrain. Last year I did a review of the BogPod DeathGrip carbon fiber tripod and while it provided excellent stability…. its 7.5 pound weight made it cumbersome to pack up and carry across different pastures thru the night. I wanted to explore how much of a tradeoff I’m willing to make between stability and maneuverability.

Simple Gourmet: Peak Refuel Backcountry Meals

  • by

I’m all for making food from scratch, and this column is normally all about crafting tasty meals from the animals you kill. But when you’re planning to add the challenges of backpacking on top of the challenges of hunting, I think you should keep it simple.

Cooking in the Blind

One does not have to live through a day of waterfowl hunting on snack cakes, candy bars, apples, and jerky. I know cooking in the blind can be a full course meal as seen in some magazines, but here, we are talking about something good to eat, easy to pack in, easy to clean up and typically gets folks to ask for more.

DeWALT Battery Powered Chainsaw – Review

Yes. Chainsaw. Today we are going to take a look at what I feel is an underrated bit of survival kit, and perhaps the greatest labor saving device in the inventory. Now obviously, this falls way down the line from food, water, medical, and safety. (Safety means guns, stuff to feed them, and preferably friends with them.) But after those needs are met, I absolutely feel this is something you should be considering.

Simple Gourmet: Peanut Butter-Fried Rabbit

  • by

This recipe is good for all kinds of small game that is fairly tender right away. Dove, chukar, pheasant, grouse, and rabbit are all good options. I wouldn’t use it on jackrabbits without tenderizing the meat first — brining would be a good option.

Decoy Lines

There are so many possibilities and rigging your decoys should provide you years of service with little or no frustration.  Time should be spent hunting not untangling decoy lines.

Simple Gourmet: Fast & Tasty Meatballs

  • by

With holiday parties and sports parties in full swing, you need this quick and simple recipe in your quiver. These meatballs are delicious on their own or simmering in sweet ‘n’ sour sauce as appetizers. Your kids will love them with spaghetti.

Dakota’s Packable Mallard Decoys

Dakota Decoys are a product of the Midwest and Missouri River Valley.  Bill Willroth, the owner of Dakota Decoys and an avid hunter and media personality orchestrates their design and development.  His show The Grind is a great way to learn and enjoy waterfowl hunting.

Simple Gourmet: Bear Ham Soup

  • by

It’s Fall, and there’s nothing like hot soup on a cold afternoon. If you made a ham from your Spring bear, or from any other critter you’ve brought home, this is a great way to use up the leftovers. Even leftovers from Sunday dinner with your pork-eating in-laws will work well.

Squirrel Tamales

Following my last article about squirrel hunting, I received several requests for a recipe for cooking up these tasty little tree dwellers. So, I have decided to post one of the tried-and-true favorites in my house, Squirrel Tamales.

Sitka Kelvin Aerolite 30 Sleeping Bag Review

I had packed the Aerolite for this hunt knowing the propensity for moisture where I’d be hunting. I was eager to see how it lived up to the claims of a durable, lightweight mountain hunting bag that retained its insulation value when wet.

Simple Gourmet: Perfect Wild Game Steak with Garlic Butter

  • by

Our elk and antelope steaks are richer and more satisfying than anything you can buy at a steak house. They’ve simply got more meat in every bite, not to mention all the microminerals we ingest by eating animals that graze on a variety of plants.

Simple Gourmet: Bear Bombs

  • by

Bear Bombs are a shoo-in crowd pleaser. These hot little packets of flaky dough are a favorite for everyone. Kids will eat anything wrapped in bread, and you can stuff them with a variety of flavors.

The Handgun Hunters Competition – Report

The Handgun Hunter’s Competition is a shooting match that stresses practical handgun hunting scenarios. The match took place in Newcastle, Wyoming. 2021 was the inaugural event, but with the interest it garnered from participants it should be around for many more years.

Simple Gourmet: Easiest Pulled Meat

  • by

Life is busy which makes it difficult to take time to eat well. Well, here’s an easy way to prepare game meat that is also easy to love. You can grab frozen meat before work and it’ll be ready to eat when you get home.

Simple Gourmet: Sweet & Sour Mountain Lion

Cougar, mountain lion, puma, catamount, painter — whatever you want to call it, if you get a text from a buddy who guides hunts for Felix concolor that reads, “Do you want a mtn lion backstrap?” you should answer affirmatively, and then beg for the hams, too.

Simple Gourmet: Beijing Bear

  • by

If they hunted bears in China, this might be how they’d eat it…or at least, if bear was on the menu at Panda Express, this is how it would be served. Bear meat goes so well with sweet recipes, and this one works well to tenderize even the toughest cuts.

See in the Dark: Hunt Like a Ninja and Shoot Like a Sniper

No matter what kind of hunting you do, working more effectively in low light can make your hunt better. The more light you use, the more you need. Know the law, some game regulations prohibit night shooting, but you can still get more hunting day by working in reduced light. Optimizing your biology and selecting appropriate technology can make every hunt better.

Simple Gourmet: Corned Elk in Your Ninja Foodi

  • by

Who doesn’t enjoy corned beef for St. Patrick’s Day? Especially when it seems like winter is dragging. Making it with your game meat is another great way to share your hunting experiences.

The Blind Bag – More Than You Need & Never Enough

I just don’t remember having the need, or the thought that perhaps, I might use more than shells and calls in my early days of hunting. But today we haul a ton of stuff simply because shell bag designers have put great thought into styles. Some use a backpack and others a bag, but whatever you use I know there will be some discussion about what you might consider hauling in for a hunt.

Simple Gourmet: Game-Stuffed Pumpkin

  • by

This is a great dish for a cold Sunday in January. It’s rich and creamy with spices for the season. Prep it in the morning, pop in the oven and go to church or take the dog for a walk in the woods and it’ll be ready when you get home.

Simple Gourmet: How To Make Sausage 101

  • by

Once you enjoy breakfast with your own links and a delicious sandwich at work made with your own salami, you’ll be shopping for a grinder and looking for more meats to grind in no time.

Simple Gourmet: Knife-Ground Meat Meals

  • by

If your season is going like mine, then you’re up to your elbows in meat processing. I was fortunate to kill a mule deer doe late in the archery season and I just killed my first elk, a cow, last week. In less than three weeks my freezer is overflowing.

DIY – Building Waterfowl Blinds: Pit and Surface

You finally have the property that will allow you to put in a more permanent blind so you want to do this right. Your site inventory has provided you with wind direction, sunrise and sunset, water levels and proximity to the decoy spread. If you have done your homework this is your time to get the blind in while it is dry and more importantly so you can blend it in, in the late summer and fall to conceal as best as possible.

Simple Gourmet: Bear & Broccoli

  • by

This recipe is perfect for meat that is less tender or coarse. Velveting the meat with the marinade is the first step, and it’s one way restaurants make thin-sliced meat feel tender and smooth in your mouth.

Simple Gourmet: Cast Iron Demystified

  • by

When I take my grandkids hunting, I expect they’ll inherit from me a gun and a cast iron skillet. I’ll teach them to kill and cook all in the same trip.

Frog Cleaning

I have processed many different types of game and fish from bluegill to bull elk and everything in between. I will say that cleaning frogs is by far one of the most challenging for me to this day.

Simple Gourmet: Bear Kabobs

  • by

Kabobs are a terrific way to share meat. They’re fun to eat, everyone likes them and you can make them on the grill, over the fire, or in the toaster oven.

Field Test: QAD Integrate MX

When my new-for-2019 Mathews Vertix arrived with a QAD rest attached to the face of the riser and not mounted to the bow’s Berger hole, my mind was truly blown.

Simple Gourmet: Smoked Bear Ham

  • by

All this meat can be served hot or chilled. If you have a food slicer, it’ll make terrific sandwich meat. Smoking is a good way to prepare a lot of meat for use later.

Field Test: SEVR 2.1 Titanium Broadhead

I’m always a bit skeptical when a new broadhead arrives on my doorstep for testing. Though I loved the packaging — these heads had a lot to prove to live up to the hype surrounding them.

Simple Gourmet: Rockfish Lemon Reduction

  • by

This lemony sauce has a sweet side and the pears add a pleasant chunk to bite. A little cardamom makes it more sophisticated. It’ll bring some variety to that freezer-full of fish you’ve been whittling away at all winter.

Simple Gourmet: Turkey Schnitzel

  • by

Turkey seasons are kicking off in many states this month. It’s funny that some people see turkey as the last hunt of the season while others consider it the first hunt of the year. Whichever camp you fall into, this simple turkey schnitzel is a good way to eat some of that “thunder chicken” breast.
